1 package (375 g) Lafleur all‑pork sausages
150 g pizza cheese blend (cheddar-based)
250 g store-bought puff pastry
All-purpose flour, for dusting
1 egg, beaten with a little milk (for egg wash)

Cook the sausages according to the instructions on the package. Pat dry thoroughly with paper towels to remove excess fat and set aside. (Do not overcook.)
Preheat the oven to 400°F (205°C).
On a lightly floured surface, cut the puff pastry into squares the length of the sausages. Brush each pastry square with the egg wash.
Place an equal amount of cheese diagonally in the center of each square. Lay one sausage on top of the cheese and fold the pastry over the sausage to seal. Secure with a toothpick to prevent the pastry from opening during baking.
Place the pastries on a baking sheet lined with parchment paper and brush the tops with egg wash. Bake until the pastry is golden brown.
Serve two pastries per portion and accompany with vegetables of your choice or a green salad with vinaigrette.
