 Potato Pancakes



Preparation
Beer-maple Syrup Glaze and Sausages
  1. Reduce beer by half in a saucepan over medium heat.
  2. Remove from heat, add the maple syrup and set aside.
  3. Slice sausages diagonally, about 3 to 4 pieces per sausage. Fry sausage pieces until golden.
  4. Add sausages to beer mixture and stir well.
Potato Pancakes
  1. Grate potatoes.
  2. In a bowl, beat egg. Add grated potatoes and flour. Mix well. Form mixture into pancakes.
  3. Fry the pancakes in the olive oil for about 2 to 3 minutes until golden on both sides. Season to taste.
How to Serve
  1. Place glazed sausages on potato pancakes.
  2. Serve with mixed greens and citrus dressing.

Culinary Comment:

In addition to being a good source of carbohydrates, potatoes are an excellent source of potassium and vitamin C. However, the amount of vitamin C contained in potatoes diminishes as they get older. It is therefore better to buy smaller quantities of potatoes at a time.
