- 12 Authentic Pork & Beef Sausages
- 1 bottle (341 ml) red beer
- 125 ml (½ cup) maple syrup
- 200 g (1 package) mixed greens (for 4)
- Store-bought citrus dressing
Potato Pancakes
- 1 egg
- 375 g (1½ cups) Yukon Gold potatoes, grated
- 30 g (2 tbsp) flour
- 15 ml (1 tbsp) olive oil
- Salt and freshly ground pepper, to taste
- Reduce beer by half in a saucepan over medium heat.
- Remove from heat, add the maple syrup and set aside.
- Slice sausages diagonally, about 3 to 4 pieces per sausage. Fry sausage pieces until golden.
- Add sausages to beer mixture and stir well.
- Grate potatoes.
- In a bowl, beat egg. Add grated potatoes and flour. Mix well. Form mixture into pancakes.
- Fry the pancakes in the olive oil for about 2 to 3 minutes until golden on both sides. Season to taste.
- Place glazed sausages on potato pancakes.
- Serve with mixed greens and citrus dressing.
Culinary Comment:
In addition to being a good source of carbohydrates, potatoes are an excellent source of potassium and vitamin C. However, the amount of vitamin C contained in potatoes diminishes as they get older. It is therefore better to buy smaller quantities of potatoes at a time.
