Ingredients
- 750 mL (3 cups) cooked long grain rice &Mac185;
- 250 mL (1 cup) cherry tomatoes, quartered
- 3 green onions, finely chopped
- 1 mango, diced
- 1 avocado, diced
- 1 egg yolk
Preparation
- Mix rice, fruit and vegetables in a bowl.
- In another bowl, mix egg yolk and mustard. Gradually add oil while stirring with a whisk. Add lime juice and zest and orange juice. Season to taste.
- Pour vinaigrette over rice. Mix well.
- Roll up slices of turkey breast or chop meat.
- Place rice salad in plates and garnish with turkey breast.
