Preparation
  1. Mix rice, fruit and vegetables in a bowl.
  2. In another bowl, mix egg yolk and mustard. Gradually add oil while stirring with a whisk. Add lime juice and zest and orange juice. Season to taste.
  3. Pour vinaigrette over rice. Mix well.
  4. Roll up slices of turkey breast or chop meat.
  5. Place rice salad in plates and garnish with turkey breast.
