Rice and Ham Sunshine Salad

Ingredients Preparation Products
  • 750 mL (3 cups) cooked long grain rice &Mac185;
  • 250 mL (1 cup) cherry tomatoes, quartered
  • 3 green onions, finely chopped
  • 1 mango, diced
  • 1 avocado, diced
  • 1 egg yolk
  1. Mix rice, fruit and vegetables in a bowl.
  2. In another bowl, mix egg yolk and mustard. Gradually add oil while stirring with a whisk. Add lime juice and zest and orange juice. Season to taste.
  3. Pour vinaigrette over rice. Mix well.
  4. Roll up slices of turkey breast or chop meat.
  5. Place rice salad in plates and garnish with turkey breast.
