Ingredients
- 4 Lafleur Authentic Pork&Beef Sausages
- 75mL (1/3 cup) olive oil
- 1 store-bought roasted red bell pepper
- 1 small zucchini
- 1/2 baby eggplant
- 125mL (1/2 cup) cream cheese
- 3 sun-dried tomatoes in oil, drained and chopped
- 2 bagels
- 6 slices Lafleur Black Forest Smoked Ham
- To taste, salt and pepper
Preparation
- Partially cut each Lafleur Authentic Pork&Beef Sausages lengthwise.
- In a skillet, cook sausages in half of oil, 2 minutes or so per side. Dry on paper towel, set aside and keep warm.
- Slice zucchini lengthwise and cut eggplant in thin rounds.
- Baste zucchini on both sides with remaining oil and place on a cooking sheet. Broil in oven 3 to 5 minutes, turning halfway through. Remove from oven and season.
- In a bowl, mix cheese and sun-dried tomatoes; set aside.
- Slice bagels in 2 and toast.
- Spread cheese mix on each bagel slice. Garnish with sausages, slices of Lafleur Black Forest Ham and roasted vegetables.
