Mimosa salad with julienned smoked sausages

Ingredients Preparation Products
  • 4 eggs
  • 6 Authentic Smoked Wieners
  • 200 g (1 cup) whole wheat croutons
  • 300 g (2½ cups) baby spinach, well packed
  • 300 g (1¾ cups) cherry tomatoes cut in half
  • 75 g (¼ cup) parmesan, grated
  • 5 ml (1 tsp) olive oil

Dressing:

  • 60 ml (¼ cup) olive oi
  • 5 ml (1 tsp) sesame oil
  • 30 ml (2 tbsp) balsamic vinegar
  • 5 ml (1 tsp) soya sauce
  • 5 ml (1 tsp) maple syrup
  • Salt and freshly ground pepper, to taste
  1. Carefully place eggs in boiling water and let cook for 10 minutes. Plunge eggs in cold water, shell and slice them, then set aside in the refrigerator.
  2. Sauté croutons in a frying pan with the olive oil. Season to taste.
  3. Grill sausages and julienne once cooked.
  4. Cut the cherry tomatoes in half and grate parmesan.
Dressing
  1. Whisk all dressing ingredients in a bowl for a few seconds.
How to Serve
  1. Divide baby spinach evenly among four dinner plates. Add sliced hardboiled eggs, sausages, cherry tomatoes and croutons.
  2. Drizzle dressing over plate and sprinkled with parmesan.

Culinary Comment:

How do you know if the spinach at the grocery store is fresh? Fresh spinach has dark green, tender and smooth leaves. Spinach is one of the vegetables containing the most vitamins and minerals. Popeye was right to eat them so often!!!
