- 8 tacos shells
- 1 can kidney beans (398 ml)
- 1 can kernel corn (341 ml)
- 250 g (1 cup) Authentic Cooked Ham, cubed (see note)
- 200 g (1 cup) Monterey jack cheese, grated
- 5 g (1 tsp) fresh coriander, chopped
- 2.5 g (½ tsp) chili powder
- 250 ml (1 cup) mild salsa
- Chopped lettuce (iceberg, mixed greens or leaf)
- Salt and freshly ground pepper, to taste
Note:
Ask the clerk at the deli counter for 2 to 3 slices of Authentic Cooked Ham about 0.5 cm (¼" thick), or approximately 100 g each.
- Drain kidney beans and kernel corn.
- Cube ham.
- In a bowl, mix kidney beans, corn, ham, coriander, chili powder and salsa. Season to taste. Mix well.
- Finely chop the lettuce and grate the cheese. Set aside.
- Heat the ham mixture in a frying pan.
- Place ham mixture, cheese and lettuce in taco shells.
Culinary Comment:
Kidney beans are one of the most commonly known legumes. Often used in Mexican cooking, these beans tend to absorb the flavour of other ingredients in the same dish. Legumes are a good source of plant protein and make an excellent addition to a healthful diet.
