Ingredients
FRITTATA
- 8 slices Lafleur Original Fresh Bacon
- 1 onion, diced
- 1 red bell pepper, diced
- 125mL (1/2 cup) broccoli, in flowerets
- 12 Lafleur All Beef Wieners
- 30mL (2 tbsp) Dijon mustard
- 10mL (2 tsp) balsamic vinegar
- 500mL (2 cups) cooked potatoes, diced
- 250mL (1 cup) Feta cheese, diced
- 6 eggs, beaten
BACON & YOGURT CREAM
- 10 slices Lafleur Original Precooked Bacon
- 125mL (1/2 cup) firm plain yogurt
Preparation
FRITTATA
- Cut slices of Lafleur Fresh Bacon in 12 and Lafleur Wieners in 8.
- In a skillet, cook bacon until crisp. Add onion, bell pepper, broccoli and wieners, then cook 2 minutes.
- In a bowl, mix mustard and vinegar. Coat potatoes with mixture and add vegetables.
- Incorporate cheese, add eggs and mix. Cover and cook over very low heat until frittata has set.
- Broil in oven until golden brown.
- Cut frittata in 8 and serve with a spoonful of bacon & yogurt cream.
BACON & YOGURT CREAM
- Reheat Lafleur Precooked Bacon in microwave until crisp.
- Crumble 6 slices and mix into yogurt.
- Break remaining slices in 2 and use to garnish frittata.
For a lighter version, use
Lafleur Less Salt Bacon and
Lafleur Light Wieners. Totally tasty!
