Preparation
  1. Cut slices of Lafleur Fresh Maple Bacon in 8. In a skillet, cook bacon until crisp.
  2. In a bowl, mix vegetables and one egg, then add to bacon. With a spatula, divide the mixture into 4 to make crisps.
  3. Cook over low heat until vegetables are golden brown and crisp on both sides; remove and keep warm.
  4. Cut two slices of Lafleur Old-fashioned Smoked Ham and fry in a skillet. Cut in 2, remove and keep warm.
  5. In a second skillet, bring maple syrup and butter to a boil, then simmer. Break remaining eggs into syrup, one at a time, keeping yolks intact. Cook 1 to 2 minutes only so yolks don't set.
  6. Place crisps in a plate, top with one slice of ham and cheese.
  7. Remove eggs and lay on cheese.
  8. Reduce maple syrup over high heat until thick and pour over eggs.

You can also use Lafleur Le Festin Smoked Ham. Mmmm…
