- 8 slices Lafleur Fresh Maple Bacon
- 1 large potato, julienned
- 200g (1/2 lb) Lafleur Old-fashioned Smoked Ham
- 1 zucchini, julienned
- 5 eggs
- 1 small carrot, julienned
- 250mL (1 cup) maple syrup
- 15mL (1 tbsp) butter
- 4 slices Cheddar cheese
- Cut slices of Lafleur Fresh Maple Bacon in 8. In a skillet, cook bacon until crisp.
- In a bowl, mix vegetables and one egg, then add to bacon. With a spatula, divide the mixture into 4 to make crisps.
- Cook over low heat until vegetables are golden brown and crisp on both sides; remove and keep warm.
- Cut two slices of Lafleur Old-fashioned Smoked Ham and fry in a skillet. Cut in 2, remove and keep warm.
- In a second skillet, bring maple syrup and butter to a boil, then simmer. Break remaining eggs into syrup, one at a time, keeping yolks intact. Cook 1 to 2 minutes only so yolks don't set.
- Place crisps in a plate, top with one slice of ham and cheese.
- Remove eggs and lay on cheese.
- Reduce maple syrup over high heat until thick and pour over eggs.
You can also use Lafleur Le Festin Smoked Ham. Mmmm…
