Berry Sauce

Note:

To use a bourbon vanilla pod in a recipe, split the pod in half lengthwise and remove the beans with a knife. Bourbon vanilla has a rich vanilla taste unmatched by any artificial flavouring.



Preparation
Fruit Sauce
  1. Dissolve sugar in water over medium-low heat. Let cool.
  2. Add chopped berries. Stir and set aside.

French Toast - Glazed Sausages

  1. In a bowl, mix eggs, milk, sugar and cinnamon.
  2. Cut bread into slices about 1½" thick. Dip in egg mixture.
  3. Melt butter in a frying pan and cook slices of bread until golden, from 1 to 2 minutes per side. Keep warm.
  4. Cut sausages in two lengthwise and fry in a pan. Add maple syrup and beans scraped from bourbon vanilla pod (see note).
How to Serve
  1. Place 2 pieces of French toast in the middle of a dinner plate.
  2. Add two glazed sausages and berries on the French toast. Pour berry sauce over all.

Culinary Comment:

Berries such as blueberries, strawberries and raspberries contain large quantities of antioxidants (polyphenols), vitamins and minerals, especially vitamin C. However, they do not keep for more than a few days in the refrigerator and should not be left in the sun or at room temperature.
