- 12 Authentic Pork & Beef Sausages
- 1 bourbon vanilla pod (see note)
- ½ loaf of French bread
- 2 eggs
- 60 ml (¼ cup) maple syrup
- 125 ml (½ cup) milk
- 15 g (1 tbsp) sugar
- 10 g (2 tsp) butter
- Pinch cinnamon
Berry Sauce
- 125 ml (½ cup) water
- 125 ml (½ cup) sugar
- 250 g (1 cup) mixed berries (blueberries, blackberries, strawberries and raspberries), finely chopped
Note:
To use a bourbon vanilla pod in a recipe, split the pod in half lengthwise and remove the beans with a knife. Bourbon vanilla has a rich vanilla taste unmatched by any artificial flavouring.
- Dissolve sugar in water over medium-low heat. Let cool.
- Add chopped berries. Stir and set aside.
French Toast - Glazed Sausages
- In a bowl, mix eggs, milk, sugar and cinnamon.
- Cut bread into slices about 1½" thick. Dip in egg mixture.
- Melt butter in a frying pan and cook slices of bread until golden, from 1 to 2 minutes per side. Keep warm.
- Cut sausages in two lengthwise and fry in a pan. Add maple syrup and beans scraped from bourbon vanilla pod (see note).
- Place 2 pieces of French toast in the middle of a dinner plate.
- Add two glazed sausages and berries on the French toast. Pour berry sauce over all.
Culinary Comment:
Berries such as blueberries, strawberries and raspberries contain large quantities of antioxidants (polyphenols), vitamins and minerals, especially vitamin C. However, they do not keep for more than a few days in the refrigerator and should not be left in the sun or at room temperature.
