Preparation
  1. Preheat oven to 375°F (190°C).
  2. Lay two slices of ham on work surface, with one piece slightly overlapping the other. Place two slices of cheese on the ham. Cover with spinach leaves and place a few pieces of red pepper on the end of the bottom slice of ham.
  3. Roll up slices of ham, beginning with the end with the red pepper. Secure with toothpicks and place in greased baking dish. Repeat with remaining ham.
  4. Bake for 7 to 10 minutes.
  5. While ham is baking, melt butter in a pot and sauté shallot.
  6. Sprinkle flour in pot and stir to brown.
  7. Add chicken stock while beating with a whisk. Bring to a boil, reduce heat and simmer for 2 to 3 minutes. Add cream and adjust seasoning.
  8. Pour sauce onto plates, cut roll-ups in half and place on sauce. Garnish with remaining red pepper.
Serve hot with wild rice.
