Ingredients
- 15 mL (1 tbsp.) butter or oil
- 1 onion, finely chopped
- 2 garlic cloves, chopped
- 1 pie crust (23 cm/9 in.) in diameter
- 22 mL (1_ tbsp.) Dijon mustard
- 2 packages (175 g) Lafleur Frillies Smoked
- Chicken Breast Roast
- 375 mL (1 1/2 cups) your choice of cheese, grated
- 2 to 3 tomatoes, thinly sliced
- 10 mL (2 tsp.) dried oregano
- Salt and fresh ground pepper, to taste
Preparation
- Preheat oven to 400ºF (200ºC).
- Melt butter or heat oil in frying pan. Sauté onion and garlic for about 2 minutes or until onion is translucent.
- Place pie crust in pie pan.
- Spread Dijon mustard over bottom of pie crust.
- Place onion and garlic in the pie crust, cover with meat and top with cheese.
- Place tomato slices over cheese so the slices overlap. Sprinkle oregano over tomatoes and season to taste.
- Bake in middle of oven for approximately 15 minutes.
- Serve immediately. May also be served cold.
Great alternative to a sandwich in a packed lunch!
