Preparation
  1. In a bowl, mix all the ingredients for the sauce and set aside.
  2. Finely julienne the carrots, avocado and ham.
Rice Cakes
  1. Soak the rice cakes in lukewarm water for 2 minutes. Be careful to not oversoak as they may become too soft.
  2. Spread a rice cake out flat. Place ham, avocado and carrots in the middle of the rice cake. Top with snow pea shoots.
  3. Fold one side of the rice cake over the ham and vegetables, and then roll as tightly as possible. Cut off the ends.
  4. Cut the roll in half and lay one half overlapping the other in the middle of a plate.
  5. Drizzle with sauce and serve with a small bowl of sauce.
  6. Repeat for all rice cakes.

Culinary Comment:

Unlike other fruit, avocadoes contain a lot of fat, which means they are high in calories. However, over 75% of the fat they contain are polyunsaturated or monounsaturated fatty acids (the good fats).
