- 8 rice cakes
- 400 g Express Authentic Cooked Ham
- 200 g (1 cup) carrots, julienned
- 200 g (1 cup) avocado, julienned
- 40 g (½ cup) snow pea shoots
Sauce :
- 15 ml (1 tbsp) lemon or lime juice
- 15 ml (1 tbsp) mild pepper sauce
- 15 ml (1 tbsp) nuoc mam fish sauce (Asian)
- 15 ml (1 tbsp) rice vinegar
- 15 g (1 tbsp) sugar
- 5 g (1 tsp) fresh ginger, chopped (optional)
- 1 clove degermed garlic, finely chopped
- 1 pinch cayenne pepper (optional)
- In a bowl, mix all the ingredients for the sauce and set aside.
- Finely julienne the carrots, avocado and ham.
- Soak the rice cakes in lukewarm water for 2 minutes. Be careful to not oversoak as they may become too soft.
- Spread a rice cake out flat. Place ham, avocado and carrots in the middle of the rice cake. Top with snow pea shoots.
- Fold one side of the rice cake over the ham and vegetables, and then roll as tightly as possible. Cut off the ends.
- Cut the roll in half and lay one half overlapping the other in the middle of a plate.
- Drizzle with sauce and serve with a small bowl of sauce.
- Repeat for all rice cakes.
