Ingredients
- 400 g Authentic Cooked Ham Lafleur, cubed (see note)
- 1 pineapple (200 g), cubed
- 175 g (⅔ cup) uncooked basmati rice
- 300 ml (1⅓ cups) water
- 250 g (1 cup) green beans
- 50 g (½ cup) green onions, finely chopped
- 10 g (2 tsp) sesame seeds
- 15 g (1 tbsp) vegetable bouillon
Sage Sauce:
- 100 ml (½ cup) sugar
- 100 ml (½ cup) water
- 15 g (½ cup) fresh sage, chopped
Marinade:
- 100 ml (½ cup) olive oil
- 100 ml (½ cup) sage sauce
- salt and freshly ground pepper, to taste
Note:
Ask the clerk at the deli counter for 1 to 2 slices of Authentic Cooked Ham about 2.5 cm (1" thick). Calculate about 3 cubes of ham per kebab.
Preparation
Sage Sauce
- Heat water and sugar in a saucepan until the sugar dissolves.
- Let cool. Pour into blender with fresh sage and process until smooth.
Marinade and Kebabs
- In a bowl, mix all marinade ingredients.
- Cut pineapple and ham into roughly 2.5 cm (1") cubes, then add to marinade. Let marinade for 15 minutes.
- Cook green beans in boiling salted water.
- Make 4 kebabs, alternating 3 cubes of ham with 2 cubes of pineapple per kebab.
- Grill kebabs in a frying pan or on the barbecue until evenly browned.
Basmati Rice
- In a saucepan, boil 1⅓ cups water and vegetable bouillon.
- Add the basmati rice and cook for 12 to 15 minutes until the rice is tender.
- Add the green onions to the cooked rice and set aside.
How to Serve
- Spoon some rice in the middle of each plate, and then add the green beans and a kebab.
- Sprinkle sesame seeds and drizzle sage sauce around the edge of the plate.
Culinary Comment:
First grown in Mesopotamia over 3000 years ago, the sesame plant was harvested for its edible oil and is considered one of the oldest agricultural crops. Sesame seeds are an excellent source of several nutrients, including magnesium, potassium and folic acid. About 82% of the fats in sesame seeds are monosaturated or polyunsaturated fats (the good fats).
