Grilled Sausages and Peach Salsa

Ingredients Preparation Products
  • 80 mL (1/3 cup) lime juice
  • 60 mL (1/4 cup) oil
  • 2 mL (1/2 tsp.) salt
  • 1 mL (1/4 tsp.) fresh ground pepper
  • 2 mL (1/2 tsp.) fresh thyme
  • 10 Lafleur Lean Pork and Beef Sausages
Peach Salsa
  • 4 ripe peeled peaches or 8 canned peach halves, diced
  • 60 mL (1/4 cup) red onions, chopped
  • 60 mL (1/4 cup) red peppers, chopped
  • 1 clove garlic, chopped
  • 15 mL (1 tbsp.) fresh coriander, chopped
  • 30 mL (2 tbsp.) lime juice
  • 15 mL (1 tbsp. ) wine, cider or rice vinegar
  1. Whisk lime juice, oil, garlic, salt, pepper and thyme.
  2. Place sausages in a flat-bottomed dish, pour marinade over sausages, cover tightly and refrigerate for 2 to 6 hours.
  3. Prepare salsa at least 30 minutes before serving. Make salsa by combining all salsa ingredients in a bowl. Keep refrigerated until ready to use.
  4. Remove sausages from marinade and grill at medium-high heat for 8 to 10 minutes.
Serve with peach salsa.
