Preparation
  1. Preheat oven to 350°F (180°C).
  2. Place potatoes, carrots, water and salt in a large pot. Bring to a boil, reduce heat and simmer until vegetables are tender. Drain. Place vegetables and ham in a deep pie plate. Set aside.
  3. Melt 1 tbsp. butter in the same pot used to cook the vegetables. Sauté onion and celery until onion is translucent. Add to ham mixture.
  4. In the same pot, melt 2 tbsp. butter over medium heat, add flour and cook until flour browns.
  5. Gradually add milk while stirring with a whisk. Bring to a boil, reduce heat and simmer until sauce thickens.
  6. Add cream, nutmeg and parsley. Season to taste.
  7. Pour sauce over ham mixture. Cover with pie crust, letting pastry extend slightly over the edge. Pinch pastry along edge to keep in place.
  8. Brush pie crust with glaze and bake in middle of oven for 12 to 15 minutes or until pastry is golden.
