- 250 mL (1 cup) potatoes, peeled and diced
- 250 mL (1 cup) carrots, peeled and diced
- 1 litre (4 cups ) cold water
- 15 mL (1 tbsp.) coarse salt
- 450 g (1 lb) Lafleur Picnic Ham, diced
- 15 mL (1 tbsp.) butter
- 1 onion, chopped
- 1 stick of celery, finely chopped
- 30 mL (2 tbsp.) butter
- 22 mL (1 1/2 tbsp.) flour
- 375 mL (1 1/2 cups) milk
- 125 mL (1/2 cup) 35% cream
- Pinch ground nutmeg
- 30 mL (2 tbsp.) fresh parsley, chopped
- Salt and fresh ground pepper, to taste
- Pie crust to cover one pie
- 1 egg beaten with a little water
- Preheat oven to 350°F (180°C).
- Place potatoes, carrots, water and salt in a large pot. Bring to a boil, reduce heat and simmer until vegetables are tender. Drain. Place vegetables and ham in a deep pie plate. Set aside.
- Melt 1 tbsp. butter in the same pot used to cook the vegetables. Sauté onion and celery until onion is translucent. Add to ham mixture.
- In the same pot, melt 2 tbsp. butter over medium heat, add flour and cook until flour browns.
- Gradually add milk while stirring with a whisk. Bring to a boil, reduce heat and simmer until sauce thickens.
- Add cream, nutmeg and parsley. Season to taste.
- Pour sauce over ham mixture. Cover with pie crust, letting pastry extend slightly over the edge. Pinch pastry along edge to keep in place.
- Brush pie crust with glaze and bake in middle of oven for 12 to 15 minutes or until pastry is golden.
