- 400 g (2 cups) apples, diced
- 240 g Express Authentic Cooked Ham
- 60 g (⅓ cup) almonds
- 30 g (2 tbsp) honey
- 15 g (1 tbsp) butter
- 65 g (¼ cup) Corinthian raisins (optional)
- 200 g (1 cup) firm Quebec cheese, grated
Buckwheat Crepes
- 1 egg
- 500 g (2 cups) buckwheat flour
- 250 ml (1 cup) lukewarm water
- 2.5 g (½ tsp) baking soda
- Salt and freshly ground pepper, to taste
Note:
Crepe batter is easier to handle if you make it the day before or let it sit for 3 to 4 hours in the refrigerator before cooking.
- Melt butter in a frying pan and sauté diced apples for 2 to 3 minutes.
- Add honey, almonds and Corinthian raisins. Mix well.
- Place all of the ingredients for the crepes in a bowl and mix until smooth.
- Cook crepes in a frying pan over medium-high heat. Keep warm.
- Place a slice of Express ham on each crepe, add the apple mixture and roll firmly.
- Sprinkle with grated cheese and broil in the oven for 2 to 3 minutes until cheese is golden.
- Drizzle honey over crepes and serve. Enjoy!
Culinary Comment:
Buckwheat is a grain rich in several important nutrients, including magnesium, zinc, potassium and folic acid. Buckwheat flour does not contain gluten, and products made with buckwheat flour do not rise when cooked. As a result, buckwheat flour can only be used for crepes and biscuits, though it can also be mixed with wheat flour to make bread.
