Ingredients
- 15 mL (1 tbsp.) oil
- 15 mL (1 tbsp.) butter
- 1 onion, finely chopped
- 1 stick of celery, finely chopped
- 30 mL (2 tbsp.) flour
- 1 bottle 341 mL (10 oz.) strong beer
- 250 mL (1 cup) chicken stock
- 1 sprig fresh thyme or 5 mL (1 tsp.) dried thyme
- 1 bay leaf
- 125 mL (1/2 cup) raisins
- Salt and fresh ground pepper, to taste.
- 1 kg (2.2 lb) Toupie Lafleur Smoked Deboned Ham
Preparation
- In a saucepan, heat oil and melt butter. Add onion and celery, and cook until onion is translucent.
- Remove from heat. Add flour.
- Add beer and mix well.
- Add remaining ingredients except ham. Season to taste and bring to a boil.
- Add ham to sauce, reduce heat and simmer for one hour. Baste frequently.
- Adjust seasoning and remove thyme and bay leaf.
Serve with vegetables in season.
Note :
This recipe can also be made with other dried fruit (apricots, prunes, etc.), as well as with a lighter beer or wine.
