Beer and Raisin Ham

Ingredients Preparation Products
  • 15 mL (1 tbsp.) oil
  • 15 mL (1 tbsp.) butter
  • 1 onion, finely chopped
  • 1 stick of celery, finely chopped
  • 30 mL (2 tbsp.) flour
  • 1 bottle 341 mL (10 oz.) strong beer
  • 250 mL (1 cup) chicken stock
  • 1 sprig fresh thyme or 5 mL (1 tsp.) dried thyme
  • 1 bay leaf
  • 125 mL (1/2 cup) raisins
  • Salt and fresh ground pepper, to taste.
  • 1 kg (2.2 lb) Toupie Lafleur Smoked Deboned Ham
  1. In a saucepan, heat oil and melt butter. Add onion and celery, and cook until onion is translucent.
  2. Remove from heat. Add flour.
  3. Add beer and mix well.
  4. Add remaining ingredients except ham. Season to taste and bring to a boil.
  5. Add ham to sauce, reduce heat and simmer for one hour. Baste frequently.
  6. Adjust seasoning and remove thyme and bay leaf.

Serve with vegetables in season.

Note :

This recipe can also be made with other dried fruit (apricots, prunes, etc.), as well as with a lighter beer or wine.
