Asparagus, tomato and smoked sausage crostini with parmesan

Ingredients Preparation Products
  • 1 loaf of French bread
  • 8 Authentic Smoked Wieners
  • 12 asparagus
  • 400 g cherry tomatoes (1 package)
  • 60 ml (¼ cup) olive oil
  • 5 g (2 tsp) fresh oregano, chopped
  • 2   cloves garlic, chopped
  • 30 g (2 tbsp) parmesan
  • Salt and freshly ground pepper, to taste
  1. Preheat oven to 200°C (400°F).
  2. Thinly slice the French bread. Place the slices on a cookie sheet and bake for 3 to 4 minutes, until golden.
  3. Cook the asparagus in boiling salted water. Cut off and reserve the tips, about 5 cm (2") long. Discard the stems.
  4. Cook the sausages in the boiling water for 2 minutes.
  5. Thinly slice the cherry tomatoes. Julienne the sausages.
  6. Chop the basil and garlic, and then mix with the olive oil. Season to taste.
  7. Grate parmesan.
How to Serve
  1. Place the sausage, tomatoes and asparagus tips on the pieces of bread.
  2. Drizzle with olive oil mixture.
  3. Sprinkle with parmesan.

Did you know there are three kinds of asparagus? Green asparagus, the one most people know, white asparagus, which is grown in the dark, and violet asparagus, which is green asparagus harvested before reaching maturity. Like all green vegetables, asparagus contains many vitamins and minerals.
