List of ingredients
  • 15 mL (1 tablespoon) of oil
  • 15 mL (1 tablespoon) of butter
  • 1 large red pepper, finely chopped
  • 1 clove garlic, chopped
  • 1/2 onion, finely chopped
  • 80 mL (1/3 cup) of white wine
  • 30 mL (2 tablespoons) of sugar
  • Salt and freshly ground pepper to taste
  • 12 to 16 crackers or baguette slices, toasted
  • 125 mL (1/2 cup) of cream cheese, softened
  • 4 Lafleur Smoked Sausages of your choice, finely sliced
  • Fresh basil, chopped, to taste (garnish)
Preparation
  1. Heat oil in a pan and melt butter. Sauté red pepper, garlic and onion for 2 minutes.
  2. Deglaze pan with white wine, scraping up bits from the bottom of the pan, and reduce sauce until nearly all the moisture has evaporated. Stir in sugar and seasoning while sauce is being boiled down.
  3. Meanwhile, heat the sausages in a pan or boiling water for a few minutes.
  4. Spread crackers with cream cheese. Cover with hot sausage slices. Top with red pepper relish and garnish with fresh basil.
Tips from the chef
  • Instead of smoked sausages, you could use fresh sausages, boiled before assembling the dish.
