List of ingredients
  • 1 1/3 lb (600 g) of Lafleur Fresh Pure Pork Sausages
  • 30 mL (2 tablespoons) of olive oil
  • 2 cloves garlic, chopped
  • 1 onion, chopped
  • 2 stalks celery, thinly sliced
  • 1 green pepper, diced
  • 1 carrot, finely diced
  • 1 540-mL (19-oz) can of diced tomatoes
  • Fresh or dried thyme
  • Salt and freshly ground pepper to taste
  • Tabasco sauce
Preparation
  1. Cook sausages in a pan over medium heat for 8 to 10 minutes. Remove from the heat and set aside, keeping warm.
  2. Add oil to a warm pan and sauté vegetables and garlic. Add canned tomatoes and thyme, salt and pepper to taste, and Tabasco if desired.
  3. Simmer sauce until reduced, about 10 minutes.
  4. Add cooked sausages and simmer for 2 minute before serving.
