List of ingredients
  • 1 whole Lafleur Old Fashioned Ham, 1 kg
  • 125 mL (½ cup) of chicken stock
  • 15 mL (1 tablespoon) of butter
  • 1 shallot, finely chopped
  • 180 mL (¾ cup) of pink grapefruit juice
  • 1 pink grapefruit, peeled and cut into sections
  • 80 mL (1/3 cup) of honey
  • Thyme
  • Salt and freshly ground pepper to taste

 

Roux:

  • 15 mL (1 tablespoon) of flour
  • 15 mL (1 tablespoon) of butter
Preparation
  1. Preheat oven to 350°F (175°C).
  2. Place ham in an ovenproof dish, add stock and cook for 30 minutes.

 

Roux:

  1. Melt butter in a small pan, add flour and cook for one minute. Remove from heat and set aside.

 

Ham:

  1. Melt butter in a small pan over medium-high heat and sauté shallot.
  2. Add grapefruit juice and thyme. Reduce sauce by one-quarter.
  3. Add honey and bring to a boil.
  4. Using a whisk, add cold roux. Simmer until thickened.
  5. Strain sauce, check seasoning and add grapefruit sections.

  • Try this with maple syrup instead of honey.
