1 whole Lafleur Old Fashioned Ham, 1 kg
125 mL (½ cup) of chicken stock
15 mL (1 tablespoon) of butter
1 shallot, finely chopped
180 mL (¾ cup) of pink grapefruit juice
1 pink grapefruit, peeled and cut into sections
80 mL (1/3 cup) of honey
Thyme
Salt and freshly ground pepper to taste
Roux:
15 mL (1 tablespoon) of flour
15 mL (1 tablespoon) of butter
Preparation
Preheat oven to 350°F (175°C).
Place ham in an ovenproof dish, add stock and cook for 30 minutes.
Roux:
Melt butter in a small pan, add flour and cook for one minute. Remove from heat and set aside.
Ham:
Melt butter in a small pan over medium-high heat and sauté shallot.
Add grapefruit juice and thyme. Reduce sauce by one-quarter.
Add honey and bring to a boil.
Using a whisk, add cold roux. Simmer until thickened.
Strain sauce, check seasoning and add grapefruit sections.
