List of ingredients
  • 2 packages of Lafleur Le Festin Smoked Ham
  • 12 new potatoes, cooked and halved
  • 500 mL (2 cups) of green beans, blanched
  • 1 398-mL (14-oz) can of artichoke hearts, quartered
  • 80 mL (1/3 cup) of red onion, thinly sliced

 

Dressing:

  • 30 mL (2 tablespoons) of old-fashioned Dijon mustard
  • 30 mL (2 tablespoons) of white wine vinegar
  • 125 mL (1/2 cup) of oil
  • 10 mL (2 teaspoons) of dried tarragon
  • Salt and freshly ground pepper to taste
Preparation
  1. Whisk all the dressing ingredients together in a large bowl.
  2. Brush ham slices with dressing. Set aside.
  3. Add vegetables to dressing mixture and stir well to coat with dressing. Set aside.
  4. Cook ham steaks on preheated grill or in a pan over high heat for 2 minutes on each side.
  5. Serve immediately with salad.
Tips from the chef
  • If there is any left-over ham, cut it into small pieces and enjoy it the next day with the rest of the potato salad.
