List of ingredients
  • 80 mL (1/3 cup) of lime juice
  • 60 mL (1/4 cup) of oil
  • 2 mL (1/2 teaspoon) of salt
  • 1 mL (1/4 teaspoon) of freshly ground pepper
  • 2 mL (1/2 teaspoon) of thyme
  • 10 Lafleur Pork and Beef Sausages

 

Peach salsa:

  • 4 ripe peaches or canned peaches, peeled and diced
  • 60 mL (1/4 cup) of red onions, chopped
  • 60 mL (1/4 cup) red peppers, chopped
  • 1 clove garlic, chopped
  • 15 mL (1 tablespoon) of fresh coriander, chopped
  • 30 mL (2 tablespoons) of lime juice
  • 15 mL (1 tablespoon) of wine vinegar, cider vinegar or rice vinegar
Preparation
  1. Mix lime juice, oil, garlic, salt, pepper and thyme. Place sausages in a deep dish, cover with marinade, seal tightly and refrigerate for 2 to 6 hours.
  2. Prepare salsa at least 30 minutes in advance by mixing all ingredients. Set aside and refrigerate until ready to serve.
  3. Remove sausages from marinade and cook on the grill over medium-high heat for 8 to 10 minutes.
  4. Serve with peach salsa on the side.
