4 ripe peaches or canned peaches, peeled and diced
60 mL (1/4 cup) of red onions, chopped
60 mL (1/4 cup) red peppers, chopped
1 clove garlic, chopped
15 mL (1 tablespoon) of fresh coriander, chopped
30 mL (2 tablespoons) of lime juice
15 mL (1 tablespoon) of wine vinegar, cider vinegar or rice vinegar
Preparation
Mix lime juice, oil, garlic, salt, pepper and thyme. Place sausages in a deep dish, cover with marinade, seal tightly and refrigerate for 2 to 6 hours.
Prepare salsa at least 30 minutes in advance by mixing all ingredients. Set aside and refrigerate until ready to serve.
Remove sausages from marinade and cook on the grill over medium-high heat for 8 to 10 minutes.
