1 or 2 175-g packages of Lafleur Ham, thinly sliced
1/2 English cucumber, diced
1/2 red onion, thinly sliced
2 tomatoes, diced
60 mL (1/4 cup) of black olives, pitted and sliced
125 mL (1/2 cup) of feta cheese, diced
80 mL (1/3 cup) of olive oil
30 mL (2 tablespoons) of lemon juice
2 cloves garlic, chopped
30 mL (2 tablespoons) of dried oregano
Freshly ground pepper to taste
Preparation
Mix oil, lemon juice, garlic, oregano and pepper in a bowl. Add onion, olives and feta. Let mixture stand for at least 30 minutes to give flavours time to blend.
Mix pasta, ham, cucumber, tomatoes and feta mixture thoroughly in a large bowl.

Cook pasta “al dente” so it holds its shape and won’t fall apart.
