Dressing:

  • 30 mL (2 tablespoons) of ginger, chopped
  • 10 mL (2 teaspoons) of sesame oil
  • 30 mL (2 tablespoons) of canola oil
  • 15 mL (1 tablespoon) of soy sauce
  • 10 mL (2 teaspoons) of mild pepper sauce
  • 10 mL (2 teaspoons) of lime juice
  • 15 mL (1 tablespoon) of honey

 

Salad:

  • 400 g Lafleur Authentique Bologna*
  • 1 cucumber, diced
  • 1 red pepper, diced
  • 8 mini corn cobs, cut in half
  • 500 mL (2 cups) of bean sprouts

*Note: At the deli counter, have 4 slices of Lafleur Authentique Bologna sliced about ¼ inch (0.5 cm) thick, or about 100 g per slice by weight.

Preparation

Dressing:

  1. Mix ginger, sesame oil, canola oil, soy sauce, pepper sauce and lime juice in a bowl. Set aside.

 

Salad:

  1. Cut bologna into fine strips.
  2. Dice cucumber and pepper.
  3. Cut mini corn cobs in half.
  4. Mix all salad ingredients together in a large bowl.
  5. Add dressing, toss salad and serve.
Tips from the chef
  • Use ham or mock chicken instead of bologna if you prefer.
