  • 1 Lafleur Smoked Black Forest Ham, 3.1 kg
  • 15 mL (1 tablespoon) of oil
  • 15 mL (1 tablespoon) of butter
  • 30 mL (2 tablespoons) of flour
  • 1 onion, minced
  • 1 clove garlic, chopped
  • 250 mL (1 cup) of dry white wine
  • 30 mL (2 tablespoons) of Dijon mustard
  • 375 mL (1 1/2 cups) of chicken or ham stock
  • Salt and freshly ground pepper to taste
Preparation
  1. Preheat oven to 350°F (180°C).
  2. Heat oil over medium heat in an ovenproof pan and melt butter.
  3. Sauté onion and garlic until slightly browned and soft.
  4. Remove pan from heat, add flour and mix well to form a roux.
  5. Return pan to stove and add wine; mix in mustard. Add stock, add salt and pepper to taste and bring to a boil.
  6. Place ham in pan, cover and cook in the oven for 15 to 20 minutes.
