Beer-glazed sausages with rösti potatoes

List of ingredients
  • 12 Lafleur Authentique Pork & Beef Sausages
  • 1 341-mL bottle of red beer
  • 125 mL (1/2 cup) of maple syrup

 

Rösti potatoes:

  • 1 egg
  • 375 mL (1 1/2 cups) of Yukon Gold potatoes, grated
  • 30 mL (2 tablespoons) of flour
  • 15 mL (1 tablespoon) of olive oil
  • Salt and freshly ground pepper to taste
Preparation
  1. Mix beer and maple syrup in a pan and bring to a boil. Cook over medium heat, reduce quantity of liquid by half and set aside, keeping warm.
  2. Slice sausages on the diagonal, 3 or 4 pieces per sausage, and cook in pan until nicely browned.
  3. Add beer-syrup mixture and baste sausages.

 

Rösti potatoes:

  1. Grate Yukon Gold potatoes.
  2. Beat egg in a bowl, stir in grated potatoes, add flour and mix well. Add salt and pepper to taste.
  3. Shape mixture into pancakes.
  4. Heat olive oil in a pan and brown potatoes on each side for 2 or 3 minutes.

 

To serve:

  1. Place glazed sausages on top of rösti potatoes.

 

Tips from the chef
  • Serve with mesclun salad and citrus dressing.
