List of ingredients
  • 4 slices of Lafleur Le Festin Ham
  • 375 mL (1 1/2 cups) of fresh or canned pineapple, diced
  • 125 mL (1/2 cup) of red pepper, diced
  • 60 mL (1/4 cup) of fresh coriander, chopped
  • 1 small red onion, thinly sliced
  • 45 mL (3 tablespoons) of soy sauce
  • 45 mL (3 tablespoons) of lime juice
  • 1 clove garlic, finely chopped
  • 30 mL (2 tablespoons) of honey
  • Cloves
  • Freshly ground pepper to taste
Preparation
  1. Preheat BBQ to medium-high heat or oven to 400°F (205°C).
  2. Mix pineapple with red pepper, coriander, onion, soy sauce, lime juice, garlic and honey in a bowl. Add cloves and freshly ground pepper to taste.
  3. Cut four squares of aluminum paper. Place a square of parchment paper on each foil square.
  4. Place a portion of ham in the middle of each square.
  5. Divide pineapple mixture on ham slices. Close foil parcels by bringing four corners together to seal the package.
  6. Cook for 7 to 10 minutes or until everything is hot.
  7. Serve with quartered potatoes grilled on the BBQ.
Tips from the chef
  • To avoid overcooking the ham, light one side of the BBQ and arrange parcels on the other side, then close the cover.
